新来的同事， 是陕西农大，葡萄酒专业毕业的， 不管是葡萄酒文化， 还是英语水平都很不错， 人也活泼开朗，我真心的希望这位同事能长期在我们公司发展， 希望她在我们公司获得她所希望得到的东西。我希望运气快快降临， 让我的这位同事多接到一些单，让她收入多一些。 老板已经安排她到我们公司的实体店去与我们的代理商商谈，看看有什么办法可以推动公司的业务更上一层楼。希望我们代理商配合我们这位新的同事，品酒师，多举办几次品酒会，让她有机会多多讲解葡萄酒的文化，多多发挥她的特长。

Limmen Estate is located in the beautiful Yarra Valley, situated 50 km northeast away from Melbourne. It is considered to be one of the greatest cool climate grape growing regions. The cool climate allows for slow ripening, and combined with low yields, the wines in Yarra Valley can achieve excellent quality.
We use a combination of French and American oak barrels（medium toast）to add to and intensify the complexity and depth of wines.
利门酒庄坐落在美丽的亚拉河谷，位于墨尔本东北50公里。亚拉河谷是澳大利亚最好的冷凉气候产区之一。这里凉爽的气候能让葡萄缓慢成熟，增加葡萄的芳香物质，并且我们严格控制产量，使葡萄酒达到优秀的品质。

The History of PARA
In 1878, Benno Seppelt, the eldest son of the winery’s founder, picked out a 500 liters barrel of wine from his best port-style wines and declared that this barrel would be stored to mature for 100 years. From then on, this winery kept this tradition to choose 3 tons of high quality grapes carefully to ferment every year, then stored it in a 500 liters barrel for 100 years and stored in bottles after that. Seppeltsfield is the only Port with a unique brown color for the moment, it has been stored for more than 130 years. 100 Year Old Para Tawny has been maintaining its excellent style and characteristic over several generations. No more than 250 liters of this wine is available in the market every year. In 2008, we supplied 888 bottles to celebrate the Olympics.

“We finished the evening with a wine I have never before tasted. Easily equivalent to the William Chambers’ greatest fortified Muscats, the Seppelt 1899 Para Vintage Tawny Port was over the top in richness and honeyed complexity. It boasts notes of Crème brûlée, toffee and melted-caramel as well as amazing flavor intensity. Yet it is neither heavy nor cloying. Great acidity gives vibrancy to this worldly elixir”.

The 1907 Seppeltsfield Para-Port, tasted like a Tawny Port on steroids as it was unbelievably intense in aromas and flavors.

Seppelt 100 Year Old Para Liqueur 1907. The usual honey, treacle consistency, the olive-green/brown wine staining the sides of the glass as it is swirled; offers cinnamon stick, every spice known to man, grandma’s Christmas pudding and a hundred other things; the senses almost go into free-fall, so intense and complex is the wine. The length is extraordinary, and all the components (including volatile acidity) are exactly as they should be. In prior years I have given the wine 98 points, which is clearly wrong.
*This is the one and only 100 point wine made in Australia. Since then, James Halliday has rated 5 in a row with the 1907, 1908, 1909, 1910 & 1911 also scoring a rating of 100 points.

The 1894 Para is almost opaque/black liquorice color.  Intense and lifted liquorice,  aniseed, molasses aromas. Very classical for centenary. Immensely concentrated wine with deep-set chocolate/burnt coffee flavours, long acidity and excellent alcohol cut. Finishes long and bitter sweet. Superb!

LIMMEN Estate began as a boutique winery situated on 20 acres in the red lands area of the Yarra Valley. The fertile red volcanic soil coupled with higher elevation produces unique fruit flavours with the subtle characteristics of cool climate wines. Grape varieties grown on the estate's 30+ year-old vines include Cabernet Sauvignon, Pinot Noir, Shiraz, Merlot, Chardonnay, Riesling and Sauvignon Blanc.

Our vines range in age from 10 to 30 years old and are considered to be very deep rooted – 3 to 4 meters, therefore we have no need to irrigate them. Our soil also has a lot to do with this, as the vines grow in rich red clay loam which retains its moisture extremely well but also makes the vines very vigorous.
To control this vigour we prune our vines to produce a low yield of fruit, some years this doesn’t necessarily happen so we are required to fruit thin the vines as well. At Limmen Estate we generally try to keep our fruiting levels between 1.5 – 2 tonnes per acre. Our vines then put all their energy and vigour into the grape and this results in a more complex and fruit driven style of wine.
All of our wines are fermented dry, so there are no residual sugars left in the wine, but the sweetness often tasted on the palate is the typical elegant cool climate fruit characteristics showing through.
Another interesting fact in the production of our estate grown wines is our location. We are situated higher than the rest of the Yarra Valley, so this makes our area of the Yarra Valley cooler, therefore puts us behind in the growth stages and gives us the ability to harvest as late as we can. This again adding to the great fruit driven styles of wine we can produce at Limmen Estate.

为了控制葡萄树的长势，有的年份，我们需要通过修剪葡萄枝来控制葡萄的产量，因为过高的产量会让葡萄品质降低，因此，需要通过修剪使葡萄树不至于长得太茂盛。在利门酒庄，通常保持葡萄园的产量在1.5-2吨/英亩，这样才能让有限的养分通过葡萄树输送给果实，结出优质的葡萄，然后酿出更为复杂和馥郁的葡萄酒。
我们的葡萄酒都是干型葡萄酒，因此酒液里没有残糖，但是通常我们饮用时舌尖会有微甜的味觉，这是典型的冷凉地区的水果带来的味感。
利门酒庄在生产葡萄酒的过程中还有一件有趣的事，那就是酒庄的位置。利门酒庄坐落在亚拉河谷的最高处，气候比亚拉河谷其他地方更凉爽，因此葡萄的生长和成熟都落后于其他葡萄园，于是我们可以尽量晚收葡萄。这有利于我们生产具有利门独特风格的以原料为本的优秀葡萄酒。

Located in classic Eden Valley country, between Angaston and Keyneton, the Milton Park vineyard has an elevation of between 330 and 400 metres above sea level.
The majority of the 100 hectare vineyard – Shiraz, Cabernet Sauvignon and Merlot were sited to maximize fruit exposure to autumn sunshine, while Petit Verdot blocks were chosen for their lower levels of direct sunlight.
Positioned among other world-renowned cool climate Shiraz producers, this is classic red country and we expect to produce some outstanding single vineyard varietals from this vineyard.

Harvest/丰收:
Fruit matures and is harvested according to flavour, acidity and sugar content. Normally picking falls within March and April.根据香味、酸度、糖含量判断果实是否成熟和采收时间。通常在三月和四月进行采收。
Wine Making: 酿酒
Within hours of harvest the fruit begins the involved and long process of wine making. Wine making of Merlot, Shiraz and Cabernet Sauvignon varieties and Chardonnay involve oak maturation.
经过几个小时的采收，果实开始复杂而漫长的酿酒过程。梅洛、西拉和赤霞珠，当然也包括霞多丽的酿造需要使用橡木桶进行醇熟。
We only use French oak barrels (medium toast) to add to and intensify the complexity and depth of the wines. The time spent within barrels varies according to variety, from 8 to 12 months for the lighter red and Chardonnay varieties to more than 12 months for the heavier and fuller flavoured/bodied red varieties including Shiraz and Cabernet Sauvignon. The wine continues to further develop after bottling, and right up to the point of drinking.
我们只使用法国橡木桶 (medium toast)来补充和加强葡萄酒的复杂性和深奥性。根据品种的不同，葡萄酒在橡木桶中存放的时间也不同，一般比较清淡的红酒和霞多丽可以桶储8-12个月，而对于一些香气丰富、酒体饱满的红葡萄品种如西拉、赤霞珠，在橡木桶中储存时间在12个月以上。装瓶以后，葡萄酒还会继续发生变化，直到被饮用下去。
